This past weekend was my Dad's birthday. He requested meatloaf and home made mac n cheese. It was delish! So I decided to share a disgustingly good and tangy sauce that my family always eats on meatloaf. I have never had it anywhere but at my house, and we all agree that it's just not good meatloaf without it:
Piquant Sauce:
1/4 C Ketchup
3 T brown sugar
1/4 tsp nutmeg
1 tsp dry mustard
Combine and microwave for one minute until warm and sugar has dissolved. Spread over meatloaf in the last ten minutes of baking, save extra for the side. SO GOOD! Yes, I know it sounds horrible. My sister in law hates it.
For the mac n cheese, make your basic bechemel sauce like I listed for the lasagne al forno, then just add a cup or two of your favorite cheese. Pour over half-cooked elbow macaroni, spread in casserole dish and bake until bubbly and golden brown on top. Not hard, very fattening, and so much better than the stuff from a box.
We also had another warm-weather family favorite (in case you're wondering it has already hit 110 degrees here this year) FRUIT PIZZA! Sounds gross until you read the recipe:
1 tube pre-made sugar cookie dough
1 block cream cheese (this recipe is good even with the fat free cream cheese, which I usually find repulsive)
1 jar marshmallow cream
4 to 5 cups of your favorite fruits, chopped in bite sizes
Take the sugar cookie dough and spread it in a well-greased cookie sheet, bake per package directions. Make sure it's not overcooked.
Using an electric mixer combine the softened cream cheese and marshmallow cream. Lick the beaters and bowl, it's so dang good (great as a fruit dip if you're doing a party tray). Spread over cooled cookie.
Sprinkle fruit evenly over the spread, then cut and serve. Don't bank on leftovers, this one is completely irresistible. Oh, just a tip, drain any fruit that's really wet before topping, such as mandarin oranges or canned pineapple. It has a tendency to make the pizza soggy. Also great to do all red and blue fruits for the 4th of July, as the cream is white and it will look really patriotic. And tasty. Yum!!!
