I'm going camping this weekend, and, as with anything in my life, my favorite part is the food. Here are some camping favorites that can also easily be recreated at home.
Tin Foil Dinners
1/4 to 1/3 lb ground beef per person
Sliced potato (whatever kind you like)
Sliced onion
Sliced carrot or baby carrots
Some people use frozen hamburger patties for this, but I prefer seasoned, so I use the basic meatloaf recipe below, minus the sauce. You can make a patty and stuff it with cheese if you like. And I do like!
Anyway, make the beef patties then construct a pouch out of tin foil: take about an 18 inch long piece of foil and fold it in half the short way. Unfold then stack in the middle of one of the halves like this-- Onion, potato & carrot beef in the middle, followed by carrot & potato, then onion. The beef will be in the middle. The reason for this is that the potatoes take longest to cook and the onions will caramelize and keep them from burning while the meat cooks in the middle without getting too tough. Make sure you season well-- I prefer Montreal Steak Rub, you can find it in the spice aisle, but anything you like works fine.
Fold the foil over and crimp the edges together so no liquid can escape. I usually double wrap because these babies are getting tossed onto hot coals so they need some structure. Make sure you turn them over a few times to ensure even cooking. A few things to make sure you have on hand: tongs to retrieve the packets from the fire, a knife to check the meat and a flashlight so you can see how done they are. This can easily be done at home in the oven or on the grill.
Banana Boats
This is the ultimate camping euphoria in my opinion. You need 4 things:
Bananas
Mini Marshmallows
Chocolate chips
Foil
Take a banana, in the peel, split it down the middle and push it open. Cram it full of as many marshmallows and chocolate chips as you can. Wrap tightly in foil and throw on the coals until it's melty and delicious. TO DIE FOR.
Pigs in a Blanket
Love this one! All you need are hot dogs and a tube of uncooked breadsticks. Wrap the dough around the hotdot, slap it on a stick and cook until the bread is done. Be careful, you don't want to be over the hottest part of the fire or it will get black on the outside and cold in the middle.
Happy camping, everyone!

Have fun camping. I love tinfoil dinners!
You can also use hershey bars instead of choc chips. That's what I did for my peeps when we went camping but I didn't eat any cause either way you eat them, they are gross!
