Copy Cat!

One of my favorite (in fact, it may be THE favorite) places to eat is Chino Bandido Takee-Outee. Well what the heck is that? If you're from the Valley of the Sun you might know that it is a wonderfully funky hole in the wall Mexican Chinese food place. I have been eating there for probably about 16 years or so. I absolutely love it. When I was living in Utah I would CRAVE it. You just cannot find anything remotely similar anywhere else. The catch is, I live in South Phoenix and the original location is about 30 minutes away. There is a closer location but the food doesn't seem to be as good.

Anyway, last night I decided to re-create my absolute favorite menu item at Chino-- Gringo Chicken. It's really nothing fancy, but inside of a quesadilla it can't be beat in my opinion. Here's the recipe:

4 grilled chicken breasts, sliced
2 roma tomatoes, cubed
2/3 cup green onion
1/4 cup butter
2 cloves fresh chopped garlic

Prepare the chicken, in the meantime melt the butter in a large saucepan. On medium heat, add garlic, sautee until soft but not brown. Add tomato and onion, sautee until soft, add chicken, heat through so flavors will come together. This is wonderfully flavorful and mild. Chino style: add it to a cheese quesadilla. Heaven.

I miss good mexican food. We just found one place that is acceptable in St. Louis. There is something different about the way the meat is prepared or something. I bet this would be good with carne asada also.

Nope! Coming from a REAl Mexican chica... this stuff is NOT real Mexican food. Aye Aye muchacha! The food there isn't that great, but of course if you are a gringa, it is super good food cause you don't know any better. HA HA
