I moved and started school, so things have been a little crazy. I did, however, make a great dish the other night that I thought I would share. It was really simple but also delicious:
1 can whole tomatoes
1 can tomato sauce
1 T fresh basil
2 cloves garlic
3 chicken breasts
Smush up the tomatoes with your hands--it's fun! place all the above ingredients in a baking pan at 400 degrees until chicken is cooked through. About 10 minutes before it's done boil up your favorite pasta, mix it in with the red sauce. Top with tons of grated parm. Delish!
I also made this:
1 package instant chocolate pudding
1 bag coconut
1 small tub cool whip
1 cookie pie crust (I made it w/sugar free cookies but you can buy it)
Make the pudding, let it set in the fridge. Add the whipped cream and coconut, splace in pie crust. Chill for about an hour-- if you can stand it! SO GOOD!
More posts to come, I promise!

Another Comment from me!! I MISS YOU!! And no, I can't believe it's almost been a year since we walked out and created our "We quit our sucky job CD"...that was a blast! "We're not gunna take it- NO we ain't gunna take it..." I have to say- we really did have some good times amongst those crazy bad ones. I just remember feeling SO relieved as you and I walked out the door- and how nice it was to leave. Our lives really have changed- and Who would have thought I would actually be moved back east for work? Craziness!! But now we're both well on our way to becoming successful women (not that we weren't before)...let's just say We've raised the bar :) XOXO Hey- for your blog- Put anything!! I miss all our daily instant messaging and all the constant, almost uncontrolable laughter that took place!!
